Much of everything in the game has to be unlocked through playing the campaign(s, with DLC), to be used in Sandbox mode (which is done by getting four stars on each island, though that differs in some of the DLC campaigns, such as RtJP).
It's a shame, as Frontier is more than capable of delivering something more polished, e.g. Dinosaur behaviour as mentioned by u/Raptorboy02 has been much improved since initial release (carnivores are not ravenous murder machines for starters), but it still falls short of what JP:OG achieved unfortunately. Site B mode doesn't technically exist in JWE, but you can do a reasonable facsimile on sandbox mode with the appropriate settings.

In terms of area size, most of the islands are on par or even larger than the average JP:OG island, but a recent mod has expand the buildable area beyond the initial boundaries so there's a lot more flexibility there. Unlike JP:OG where you generate islands via a randomised generator, you're restricted to the five islands in the main campaign and Isla Nublar itself, though three subsequent DLCs add two maps each. Don't mind the time limit, it's just there to challenge yourself. If you're looking for a JP:OG like game experience, Challenge mode on easy or medium is the closest thing you would get.
